Squares are great if you're planning a party or a gathering of some kind. Pasticcini di Mandorle e Caffè (Coffee-Flavoured Almond Cookie Squares) are an elegant dessert that are good warm or cold or dunked in milk or coffee. Almonds, sugar, egg whites, espresso coffee and powdered sugar are all that's needed to make these delicious morsels. The treats are sprinkled with powdered sugar for that final touch.
To appease the chocolate-lovers out there, try out Mocha Espresso Bars. Preheat oven to 350 degrees. In a saucepan, melt 4 tablespoons of butter. Add 1 cup of brown sugar and stir until dissolved. Cool mixture and then beat in egg. Sift together unbleached white flour, 1/2 teaspoon of salt and 1 teaspoon of baking powder and add to butter-egg mixture alternately with espresso black coffee. Blend in 1/4 teaspoons of vanilla extract and stir in 1/2 cup of semisweet chocolate chips 1/2 cup chopped nuts.
Turn into a well-greased 9-inch baking pan. Bake for 25 to 30 minutes or until a toothpick inserted comes out clean. Then cut into small squares and serve.
For something nutritious and tasty, there's Apricot Bars, which are sprinkled with cinnamon or nutmeg. But the most famous fruit bars have to be those made from lemon. Ingredients include butter, flour, powdered sugar, lemon juice, baking powder and eggs. You can also mix in other fruit ingredients into this mix, such as cranberries. For something more satisfying, try adding in cream cheese.
If you want something that is less of a dessert and more of a finger-food there's a slew of recipes to choose from.
Buttermilk Curds with Saffron Squares will definitely add a different flair to your next appetizer table. To prepare, put 500 grams of curds into a bowl and with a wooden spoon beat in two eggs separately. Add 2 sachets of saffron (heated slightly with some water) finely chopped parsley and salt to taste. Mix thoroughly and spread evenly over a buttered baking-dish. Cook in the oven at 180 degrees Celsius for about 15 minutes. And then cut into squares. These delicacies are equally good served warm or cold.
